This website was created to be a fun, informative site for the next generation of chefs and home cooks around the world. This site serves two purposes: 1) I want to share with you some of my family's best and most traditional Filipino dishes by sharing their recipes and showing you how to make them in my exclusive cooking videos. 2) I'm going to share with you some of my comfort food recipes that I've been making for years and also share with you new and inventive French-inspired Californian dishes.
I am a classically trained chef in French and Californian Cuisine. I named my site "The Toque and Apron" for a reason. A toque (pronounced tōk) is a hat worn by a cook or a chef. The taller the hat, the higher rank you were in the kitchen. Each pleat also signified the number of ways the chef could cook an egg. How fascinating! I took that concept and said, I want to show the world the many ways to cook and share the melting pot of cultures and food traditions from all over the world. That's the concept of the toque...there are a myriad of ways you were taught how to make a dish. My intention is to educate and that's the significance of the pleats in a toque. I welcome everyone's opinions and contributions. This site is dedicated to the ever-changing food cultures of the world. Why not try and put a Pinoy twist on some dishes or French twist on a Pinoy dish? But wait, aren't all the dishes in the world somehow inspired or influenced by another culture? I want to explore these questions with you! Who knows what will happen in the kitchen...I'll try not to get too crazy.
